It’s that spirit of giving that led people living and working in two north Alabama nursing homes to help charitable causes in their communities.

Barfield Health Care, Guntersville

In Marshall County, Barfield Health Care staff members participated in the “A Night to Remember” event hosted by Alzheimer’s Services of Marshall County.

The night began with a memory walk from the Albertville Chamber of Commerce to Albertville High School’s McCord Stadium. At the stadium, luminaries were placed to honor and remember those who have encountered dementia in their life’s journey.

The Barfield Health Care team won first place for collecting the most donations from family, friends and family members of Barfield Health Care residents. The team also released balloons in honor of and in memory of people affected by Alzhemier’s.

This cause carries extra meaning for Barfield Health Care employees because the nursing home has a special area to care for people with Alzheimer’s and dementia.

“We work with people diagnosed with Alzheimer’s and dementia every day,” Linda Sue Smart, Barfield Health Care’s team captain and a nursing secretary. “We know first-hand what people go through when caring for someone with this disease. We want to help families who are caring for their loved ones at home. Our staff is very committed to helping these families.”

Alzheimer’s Services of Marshall County is a nonprofit, volunteer organization of caring professionals who promote awareness of Alzheimer’s disease and provide education, information and referral services and support. All contributions stay in Marshall County to help families coping with Alzheimer’s disease or Dementia.

Residents of Hanceville Nursing & Rehab Center (HNRC) cooked up an impressive fundraiser.

HNRC Resident Council President Edna Kilgo and several other residents decided to host a fried pie bake sale to support Victim Services of Cullman.

The residents, with the help of activities and social services staff members, made a bounty of apple and cherry fried pies from scratch.

The sale raised $300.00 for the local non-profit that provides services to victims of domestic violence and sexual assault.

“When we came up with this idea, we knew we wanted to donate to a place here in our community, Ms. Kilgo said. “We were extremely happy to give the money we raised to such a good cause.”

Here’s the recipe if you want to make the fried pies that raised money for a deserving, local cause.

 

Recipe: Hanceville Nursing & Rehab Center’s Fried Pies

Ingredients:

  • 2 (12 oz) tubes refrigerated biscuits
  • Flour for rolling out biscuits
  • 1 cup canola oil
  • 20 oz can fruit pie filling, any flavor (HNRC uses apple and cherry)
  • Powered sugar for dusting or cinnamon and sugar to taste

Instructions:

  • Remove biscuits from the package, let stand at room temperature for 20 minutes
  • On a lightly floured surface, roll out each biscuit until about 4-5 inches
  • Add 2 tablespoons pie filling to the middle of the biscuit
  • Fold over and seal with a fork
  • Heat oil in pan
  • Carefully add 2-3 pies at a time, depending on the size of your pan
  • Cook for about 8-10 seconds on each side or until golden brown
  • Remove and place on paper towel to drain
  • Dust with Powdered Sugar or sprinkle with cinnamon and sugar mixture

Recipe Notes:

  • Be sure you have all the pies ready before you start cooking, because they fry up really quickly.
  • You can use 1 tube of biscuits, but you will have left over pie filling.
